2021 Pinot Noir

A true testament to the elegance that people associate with our wines. Beautiful red fruits on the nose with refined tannins on the pallet. Wonderful length. Very classic Pinot Noir reminiscent of the Pinots that come from the Côte de Beaune in Burgundy.

2021 was a very cool summer which allowed us to get phenolic ripeness prior to sugar ripeness, similar to our Chardonnays. The fruit was de-stemmed fully with a nice long cold soak, and was on the skins for a total of 25 days. Pressed gently in our basket pressed to avoid any bitterness. Settled for a day and then racked to the best French oak barrels on the fine lees. Spent 18 months in barrel with an additional 4 months in tank on the fine lees prior to bottling. Bottled unfined and unfiltered.
